Meat Processing and Packing Industry

Daily Laboratories tests meat products for microbiological quality. This includes indicator organisms, as well as pathogens. We test carcass samples and rinses, ground meat, raw trim N-60 samples,  raw finished products and cooked product. We also work with meat processors to monitor their plant’s environments for Listeria sp. and Salmonella sp.

Analyses for the meat industry includes:

E. coli detection – generic

E. coli 0157:H7

Listeria spp.

Salmonella spp.

Environmental samples for Listeria spp., Salmonella spp. and coliform

Finished products, such as jerky, can be tested for pH and Water Activity for shelf stability.

All of the analyses are done with AOAC certified and USDA approved methods.
